Gammon Chowder


Every week day at The Prince, we offer an After Work Special. Today’s was really popular and received loads of great comments. So I have included the recipe below: serves 6

Gammon Chowder ... hearty good grub!

For the chowder

2 tbsp butter

1 large onion, finely chopped

250g of gammon, cut into cubes

1 garlic clove

500g of potatoes, skins on, chopped into bite size chunks

100g of sliced carrots

1 small tin of Mushy Peas

1 litre of hot vegetable stock

Large 250ml glass of white wine

salt and freshly ground black pepper

To serve
small handful fresh parsley, chopped
2 tablespoons creme fraiche
2 chunks of crusty bread

Method

1. Heat the butter in a saucepan and gently fry the onion until softened but not coloured.

2. Dust the gammon pieces with flour then add to the pan; increase the heat slightly and fry for 5 minutes.

3. Add the garlic, mushrooms and white wine; cook for a further minute.

4. Add the stock, then the potatoes and carrots. Bring to boil then add the mushy peas and simmer for 10 minutes or until the vegetables are cooked. Season with salt and freshly ground black pepper.

5. To serve, pour the chowder into bowls, sprinkle over the parsley and swirl in the creme fraiche.

This really is a tasty dish. Once you have made it, you will probably agree with me that at £2 a big portion, its cheaper to let me cook it for you at The Prince. And there’s no washing up!
